A few years ago, most of you wouldn’t have thought twice about getting off a taxi in Wandegeya to queue up for a Rolex (Chappati-egg roll) by the roadside, unbothered by the dust and questionable hygiene of the vendor. While those days are firmly and forever behind you, there are times when the craving hits so bad that you would give anything to have a hot chapatti stuffed with spicy, juicy fried eggs. Bearing this in mind, Chef Ali Mawanda of the Garden City based Sound Cup cafe thoughtfully included the much beloved local delicacy on his menu. He shared with us his recipe for his addictively tasty Rolex.

Ingredients

Two eggs

Chopped onions

Diced tomatoes

Chopped green pepper

Cooking oil

Salt
The process

Crack the eggs into a large mixing bowl and beat by hand with a whisk or fork. Add the chopped onions, green pepper and tomatoes.

Pour 1-2 Tbsp of olive oil into a small, non-stick frying pan and heat on medium heat. Be careful not to get the pan too hot because the oil will burn.

When hot, pour the mixture into the pan and spread out evenly. Allow the egg to cook around the edges. Then you can carefully lift up one side to check if the egg has slightly browned.

When the mixture has browned on the bottom, you are ready to turn it over to cook the other side. Using a spatula, remove egg from pan, onto the ready chapatti, and then roll.

Chef Mawanda uses toothpicks for a neat finish. He also uses parsley to garnish. The Sound Cup Rolex is served with crispy chips or whatever you fancy.
